I had one of those days today. Nothing on the table, nothing on the stove and 3 bellies to feed. Enter Noodles in Coriander and Cashew pesto and the day is saved. Super delicious with minimum effort. Its all the pesto actually. The noodles is baking in the pesto's glory.

Ingredients

Noodles/ Spaghetti
1
Coriander
1 Bunch
Cashews
1/4 Cup
Olive Oil
2 Tablespoons
Parmesan, grated
1/4 Cup
Pepper Powder
1 Teaspoon
Garlic, minced
2 Teaspoons
Basil leaves

Steps

  1. Cook the noodles according to the instructions on the pack and drain it. Keep aside
  2. In to your food processor, add the other ingredients except olive oil and grind together. Slowly add the olive oil through the funnel of the processor until it all comes together to form a paste. Regulate the oil to reach the desired consistency. I ended up with a semi-thick paste.
  3. Toss the noodles with the pesto.
  4. Pretend like you did a lot of work and trick your husband to helpi you with doing the dishes. :)
